Blueberry Crush

Blueberry meringue dessert


  • 4 mini meringues crushed into crumbs*
  • ½ cup mixed berries
  • 60mls Hartzview Blueberry fortified wine
  • ½ cup thickened whipped cream
  • 1 scoop of vanilla ice-cream
  • Raspberry sauce to garnish
  • Sprig of fresh mint to garnish


  1. Line the sides of the glass with raspberry syrup
  2. Place 1 tbs of mixed berries and 1tbs of crushed meringues into the serving glass
  3. Gently place the scoop of ice-cream on top
  4. Pour over Hartzview blueberry fortified wine
  5. Continue to layer the berries, whipped cream and meringue until the glass is full
  6. Top with remaining cream and berries
  7. Garnish with Raspberry sauce and mint


  • *You can buy packets of mini meringues from any supermarket
  • Prep time: 5 mins. Total time: 10 mins. Serves: 1
